Your accountant reads along for free from their own account.

How do online payments work at each?

At WeFact you connect your own Mollie account. At factuurmaken you can do that too, or let factuurmaken open a MultiSafepay account for you and pay a fixed amount per successful payment.

Can I switch without breaking my numbering?

Yes. You set the invoice number to continue from and the sequence runs on. You add clients as you invoice, with their details from the KVK register.
